I love KFC but I just don’t understand the current craze with the new KFC burger. For one, I dislike barbeque sauce in any food. And thinking of slapping cheese and bacon on my KFC with a mix barbeque sauce in a mouthful is enough to make me sick. The alternative to KFC which is a healthier but equally as tasty chicken is my version of roast chicken with peas and tomato salad.

The secret ingredient in this recipe is a wonder packet of Four Seasons Spicy Bake Mix powder which is made specifically for roasting chicken. A box which costs about $4 comes with six individually wrapped packets of baking powder and is readily available in most Asian grocery shops. Although labelled “spicy”, there is absolutely no hint of spice in this wonder powder which is actually a good thing because it is pretty damn tasty in itself.

    That looks delicious, although I do love my KFC chicken pieces, I only eat them once or twice a year.

    Oh I can’t imagine anyone eating one of those KFC burgers either. They look disgusting! Am pretty sure one of those could feed our entire family if pulled apart and served with vegies and/or salad. I also HATE BBQ sauce. I get too scared to cook the whole chicken (you can tell I never touch turkey either for Thanksgiving). I need to just try once. I have too much imagination sometimes. Haha.     I ate KFC as a kid, but I can’t abide it now. Really, once you get past the batter, the meat has little taste. Give me a home-cooked chicken like yours any day instead. 😉

    Your chicken looks great. I can’t stand commercial fried chicken. The breading is always too thick. True, Southern fried chicken is supposed to have a very thin coating of flour and spices. I’m still reeling from my Momma’s pan fried chicken I got to eat the other night.

  13. I tried the KFC bunless burger this week in desperation- nothing else available on a looong country road trip- and I have to say that your chicken would beat it hands down! If you only had a drive-through!!

  15. Interesting idea to put tomatoes in the bottom. I saw a recipe where you put potato slices and these turn quite crispy, and potentially clog your artery:).

  16. Oh I just know which spice mix you’re talking about :) though not the same brand. I just never thought you could use it on roast chicken! Mmmm great tip for that one :)

      When it comes to roast chicken, I only use this brand of bake mix which I believe to be the best.
