I love KFC but I just don’t understand the current craze with the new KFC burger. For one, I dislike barbeque sauce in any food. And thinking of slapping cheese and bacon on my KFC with a mix barbeque sauce in a mouthful is enough to make me sick. The alternative to KFC which is a healthier but equally as tasty chicken is my version of roast chicken with peas and tomato salad.
The secret ingredient in this recipe is a wonder packet of Four Seasons Spicy Bake Mix powder which is made specifically for roasting chicken. A box which costs about $4 comes with six individually wrapped packets of baking powder and is readily available in most Asian grocery shops. Although labelled “spicy”, there is absolutely no hint of spice in this wonder powder which is actually a good thing because it is pretty damn tasty in itself.
Ingredients
1 whole chicken (approximately between 1.5 – 2 kg)
5 ripened tomatoes
4 cups of peas
1 packet of Four Seasons Spicy Bake Mix
1 tablespoon oyster sauce
2 tablespoon brown or white sugar
Method
Salad
1. Slice 4 tomato and add to peas.
2. Add 3 – 4 tablespoon of good extra virgin olive oil, sea salt, freshly cracked black pepper and a squeeze of lemon juice for a wonderfully fresh and yet simple salad.
Chicken
1. Sprinkle one packet of the spicy bake mix all over the chicken and put generous amounts in the chicken cavity.
2. Dice 1 tomato and place in a roasting tray.
3. Add 1 tablespoon of oyster sauce, 2 tablespoon of sugar and 1 cup of water to the diced tomato and mix well.
4. Place marinated chicken on a stand over the roasting tray so that it catches all the roasting juices from the chicken.
5. Place BREAST SIDE UP in a hot oven of 220 C and bake for approximately 45 minutes until chicken is golden brown.
Tip: About 20 minutes into the baking time, brush chicken all over with some olive so that skin will be crispy and golden brown.
6. Empty cavity juices into baking tray then skim off fat from roasting juices (This is the ‘fat’ difference between KFC and this recipe).
7. Use disposable glove to handle chicken and cut into Marylands and breast pieces with kitchen scissors.
8. Serve chicken with gravy, peas and tomato salad.

That looks delicious, although I do love my KFC chicken pieces, I only eat them once or twice a year.
What a fabulous dinner. Your chicken looks wonderful so good I am surprised there were left overs!
Oh I can’t imagine anyone eating one of those KFC burgers either. They look disgusting! Am pretty sure one of those could feed our entire family if pulled apart and served with vegies and/or salad. I also HATE BBQ sauce. In fact I blogged about the KFC burger here: http://www.maidinaustralia.com/2011/03/wanky-wednesday.html
Great minds think alike!
I love the bright colors in that salad!
My husband too hates barbecue sauce!! This meal looks so simple and yet so flavorful. Will try this next time.
Oh yum, yum…I can never resist roast chicken. Yours look gorgeous :).
Yum!!!! Looks really delicious! My favorite chicken….my husband’s fried chicken strips. By the way, I had no idea anyone ate raw chicken. Learn something new every day.
Your photography skill is amazing. I never seen simple tomato and green peas picture that is so beautiful. The whole chicken looks wonderful. I get too scared to cook the whole chicken (you can tell I never touch turkey either for Thanksgiving). I need to just try once. I have too much imagination sometimes. Haha. Your dinner looks wonderful!
I ate KFC as a kid, but I can’t abide it now. Really, once you get past the batter, the meat has little taste. Give me a home-cooked chicken like yours any day instead. 😉
Your chicken looks great. I can’t stand commercial fried chicken. The breading is always too thick. True, Southern fried chicken is supposed to have a very thin coating of flour and spices. I’m still reeling from my Momma’s pan fried chicken I got to eat the other night.
your chicken looks amazing (and no, i would never eat raw chicken!), but i love your peas. i could eat peas simply prepared every day for the rest of my life.
A scrumptious meal! Lipsmackingly good…
Cheers,
Rosa
I tried the KFC bunless burger this week in desperation- nothing else available on a looong country road trip- and I have to say that your chicken would beat it hands down! If you only had a drive-through!!
Wow, this is sure a nice meal…the chicken looks very tasty and great with the side veggies…perfect. Hope you have a great week ahead
Interesting idea to put tomatoes in the bottom. I saw a recipe where you put potato slices and these turn quite crispy, and potentially clog your artery:).
Oh I just know which spice mix you’re talking about though not the same brand. I just never thought you could use it on roast chicken! Mmmm great tip for that one
Hi, could you suggest what we can use in place of the bake mix?
Tks
Dear BK,
When it comes to roast chicken, I only use this brand of bake mix which I believe to be the best.
Oh my lord. the four season spicy bake mix. I can’t find it anywhere where I live in (which is Calgary btw). Where did you buy this? Maybe I can stock up if I end up where you live
Oh my lord. the four season spicy bake mix I have used for 1o years of my life but my local Chinese Market I used to buy it from do not carry it anymore. I can’t find it anywhere where I live in (which is Calgary btw). Where did you buy this? Maybe I can stock up if I end up where you live
